New Denver Restaurants to Earn Michelin Stars

Three new restaurants in Denver won acclaimed Michelin stars, another making history for being the first restaurant in Colorado to win two stars.

The Wolf’s Tailor in Denver, at 4058 Tejon St. was honored with two stars from Michelin. According to the Michelin Guide, The Wolf’s Tailor specializes in farm-to-table, sustainable, contemporary creative cuisine. The Denver Post cites that the restaurant got its first Michelin star back in 2023.

In case you aren’t familiar with how the Michelin Guide’s star system works, here’s a crash course. One star means that the restaurant has overall excellent cooking and ingredients; two means that the food is refined and inspired by the chef, and three means the cooking is elevated to an art form.

Mezcaleria Alma, Margot, and Kizaki are the three new Denver recipients of a Michelin star.

Opened only in November, Mezcaleria Alma specializes in Mexico City-inspired cuisine. The guide states that, “evoking the vibrant creativity of Mexico City’s restaurant scene, the succinct menu is sprinkled with international flavors.” Mezcaleria Alma is located at 2550 15th street in Denver.

Both Margot and Kizaki are located in Denchu—1551 S. Pearl St., Denver—a building designed by Kizaki Sushi Den chef and co-founder, Toshi Kizaki.

Margot created by chef Juston Fulton, is located at the front of Denchu, specializing in shared, multi-course dishes. The guide calls it, “a contemporary multi-course tasting that follows the seasons, (Fulton’s) signature cuisine is both global and distinctly Coloradan.”

Kizaki on the other hand focuses on an omakase menu with over 20 courses. Michelin guide states that omakase directly translates to “I leave it up to you,” where chefs create seasonal meals. there is no ordering or even menus some of the time. In reviewing Kizaki, Michelin inspectors wrote, ““In a culmination of his long career, (Kizaki) now raises the stakes with this luxurious counter, bringing a new echelon of omakase to the Mile High City.”
