This plant-based paradise sits nestled at 837 East 17th Avenue in Denver’s vibrant Uptown neighborhood. Watercourse Foods stands as a culinary gem, delighting patrons with its exceptional vegan offerings since 1998. Beyond merely a restaurant, it has become a haven for plant-based enthusiasts, and those seeking comfort, and culinary excellence.

The skilled team at Watercourse Foods, and its sibling establishment, City O’ City, weave culinary magic with the purest, locally sourced ingredients. Their commitment to supporting local farmers, and artists reflects dedication to fostering a sustainable environment whilst being an active participant in the community.

Watercourse Foods boasts a diverse menu that caters to discerning tastes whether vegan or not. From the indulgent Dulce de Leche Waffles, to the tantalizing Cuban Sandwich, daily empanadas, Banh Mi Bowl, Tofu Thai Curry, and Sweet Potato Gnocchi, Watercourse’s array of dishes is as extensive as it is delectable. Their culinary offerings extend beyond solid fare including inventive artisan cocktails and more.

Watercourse is emphatic when it comes to sustainability. Their food doesn’t contain anything artificial including colors, preservatives, or hydrogenated oils, and the restaurant spaces are energy-efficient due to their use of biodegradable containers and packaging. These are just a few of the decisions made by co-owners and CEOs Jennifer Byers, Lauren Roberts, and Hanna Kuehl  in order to create a better environment.

Outside of the culinary realm, Watercourse Foods is a patron of the arts. They feature rotating exhibitions that showcase talented local artists within the restaurant’s welcoming atmosphere.

During my recent visit to Watercourse Foods I had the privilege of conversing, and dining with Jess Bayes, the Executive General Manager. Bayes is a proud member of the LGBTQ+ community, and self-realized her identity in middle school, and later came out at the age of eighteen. She says that pride is not merely an annual celebration, but a daily affirmation of self-expression and authenticity.

 

Originally from Florida, Jess has been an integral part of Watercourse Foods since 2017 when she began contributing her extensive background in hospitality and seven years of management experience. Actively engaged in the culinary community, she serves on the Board of Directors for the Colorado Restaurant Association, and participates in organizations like CHOW, and ProStart. Her overarching goal is to leave a lasting impact on the restaurant industry, a she strives to pursue that mission with unwavering passion.

Outside the bustling walls of Watercourse Foods, Jess finds joy in Sunday suppers at Somebody People, invigorating hikes, shared meals with friends, music, and unabashed singing. While the aroma of grilled food evokes childhood memories, her current comfort foods are the soul-warming Pho and miso soup.

“Community” isn’t just a word for Jess, and the talented crew at Watercourse Foods and City O’ City—it’s a guiding principle. Their commitment to plant-based, sustainable cuisine goes beyond rhetoric; it’s a genuine effort to nourish both the body, mind, and soul of everyone that walks through their doors. Every dish, cocktail, and piece of local art within Watercourse works to emulate the spirit of community creating a culinary experience that is truly unique
